Has flown by and we’re down to just a very few weeks left. “Green” winters have truly been a blessing. Time spent doing many of the same things I love to do up North: cooking and stitching. Recently, a batch of “Sour Cream Enchiladas” produced meals to share. It’s a favorite of ours and you may find a similar recipe on the Pioneer Woman’s site. I used plain Greek yogurt in the place of the sour cream (for those who are lactose challenged!). I coupled this with a yummy Oatmeal Cake with broiled topping (found here). Note: I substituted Thai (brand) unsweetened coconut milk where evaporated milk is called for.
I started the next piecing project…..another kit that had been languishing in the shadows for several/many years. I love star-patterned quilts and thought that this would have some great quilting possibilities when completed. So, from many of these pieces to a block to these 9 beauties…. On to the fusible pieces for the raw edge applique.. The next steps will have to wait till our return home as that is where my Bernina (with the fab blanket stitch) resides! I guess the ‘rest of the story’ will have to wait a bit. The kit is a Connecting Threads kit.
